Hey friends. There’s only two months left in 2023 and this year we’ve felt incredibly grateful for you. Yes, YOU. Thank you for following this #UNLITTER journey and working with us to make the Earth a better, cleaner place.

As we transition from fall to winter, we wanted to take a look at all we’ve accomplished together this season and all we have to look forward to. Also, keep reading if you want some delicious, healthy recipes to impress your family and friends this holiday season.

Recipes to #UNLITTER Your Gut

Roasted Carrot Ginger Soup

Vinny, the recipe creator behind Always From Scratch, partnered with #UNLITTER to create the perfect fall soup. We’ve tried it and it’s just the thing that will keep your family warm and happy this season. What’s even better? The recipe is completely vegan, making it an option suitable for anyone who may take a seat at your table.

Ingredients

  • Carrots (the big ones)

  • Vegetable Broth (can use chicken if you don’t want to make it vegan)

  • Coconut Milk (or heavy cream works too, if you aren’t making it vegan)

Tools you will need:

  • Food processor or blender

  • Immersion blender will also be helpful!

Vegan French Toast

Thanksgiving isn’t just about the big feast, there’s the morning before and after to focus on too! What screams cozy fall morning more than some french toast? Here’s a recipe by Nora Cooks that takes an eggless approach to the breakfast dish.

Ingredients

1 cup unsweetened soy milk (or any non-dairy milk)

¼ cup cornstarch

½ tsp baking powder

2 tsps pure maple syrup

6-8 slices of thick sliced bread

¼ cup cornstarch

1 tsp ground flaxseeds

1 tsp ground cinnamon

1 tsp vanilla

2-3 tbsp vegan butter or coconut oil

Maple syrup for topping

Directions

  1. In a shallow bowl, large enough for a piece of bread, whisk soy milk, cornstarch, ground flaxseeds, baking powder, cinnamon, maple syrup, and vanilla.

  2. Add some vegan butter/coconut oil to pan over medium-high heat and let melt. Whisk batter again before dipping bread, to make sure the cornstarch didn’t sink to the bottom.

  3. Dip each side of the bread in the batter, letting soak for around 10 seconds. Then, add the bread to the pan and cook 2-3 minutes on each side, or until golden brown. Add more butter/oil to pan as needed for each slice.

  4. Serve it up with some maple syrup and toppings of your desire!

Jupiter, Florida

The #UNLITTER Jupiter community got together for a beach clean up at the end of October. With high schoolers and middle schoolers coming together to pick up trash, the future of #UNLITTER is bright. Jupiter #UNLITTERer Olivia Gilbert wrote about the experience on our blog. Read about it here!
